Oh carrots sweet carrots. Eat them raw with a simple dip or use them in a classic soup. Carrots are extremely versatile and found in so many dishes. This week we show you 3 extremely unique yet simple ways to prepare this workhorse vegetable.
*Roasted carrots with tahini dressing*
2-4 large carrots "oblique" cut as shown in video
Olive oil (1-2 tbsp)
Kosher salt, pepper & cumin to taste
1 tbsp tahini
1 tbsp olive oil
1-2 tsp vinegar or lemon juice
1-2 tsp maple syrup
1/2 tsp kosher salt & cumin powder

Black sesame seeds
Chopped scallion or parsley
*Carrot and Cardamom "Pudding"*
2 grated carrots
1 pinch kosher salt
1 tbsp ghee
1.5 cups milk
3-4 cardamom pods (seeds crushed) -1 tbsp sugar -Nuts or coconut to top *Carrot & Mayo Salad* -2-3 grated carrots -2.5 tbsp mayonnaise -Kosher salt & pepper to taste
