A Very Fun (Family) Dinner

As mother’s and father’s day fast approach, we want share with you some fun dinner “blueprints”! Try serving an interactive, build-it-yourself meal to turn dinner time into a family play time. Or mix up your table talk by asking intriguing and silly questions to spark conversation.

Spring-time Spring Rolls
Serves 4-6
Ingredients:
Rice wrappers (15-18)
Tofu, firm (1 large block)
Soy sauce (1/2 cup)
Shrimp (1 lb)
Cilantro, basil, mint (1 bunch each)
Vermicelli noodles (2 large packages)
Carrot (2 large)
Bell pepper (1-2)
Cucumber (1 english)
Lettuce (1 head)
*Optional bean sprouts
Directions:
Chop all veggies into matchsticks, clean and rough chop herbs as desired, and rip up lettuce
Cook off rice noodles according to package instructions
Prepare protein: boil shrimp & remove any shell, chop & marinate tofu, and anything else as desired
Make dipping sauce, recipes below (or simply use pre-made sauces)
Set everything out on table with serving utensils. At this point everyone should gather around the table and make their own rolls.
Fill a large brimmed metal bowl with warm water
First- pick out fillings… then:
Soak and fully submerge rice wrapper in warm water for ~10 seconds until pliable. Place on a plastic or ceramic clean plate and let rest for another 10-15 seconds until a bit more pliable.
Add desired fillings in one line on the bottom third of the spring roll
Roll & enjoy right away with your favorite dipping sauce
Try making your own Nuac Cham , peanut sauce , or simply enjoy with soy sauce, oyster sauce, or sweet chili sauce!
